Boil filtered water and then vigilantly rinse the paper filter to purge any unwanted paper flavour
Use burr grinder to grind 22 grams of whole beans (coarse-ish) and then collapse the coffee into the filter paper, to create an even coffee bed
Take the water off boil and rest it for 1 minute, or until the water is approximately 93-96 Degrees Celsius
Pour 50 grams of water onto the coffee bed and stir rigorously with your stirrer until all the coffee is consistently saturated
Wait 30 seconds for the coffee to de-gas and then start pouring slowly into the centre of the coffee bed- to ensure you get an even extraction, your pour should be slow and both your water and coffee lines should be in sync
Pour until you reach 360 grams of water and stir one more time to ensure that you have saturated all of the coffee- your pour should take 2 minutes and your total contact time should be around 2:30 minutes
